Rocky Road Chocolate Muffins



  • 6 tbsp sunflower oil or 85g melted butter, plus extra for greasing

  • 55g cocoa powder

  • 225g plain flour

  • Pinch of salt

  • 1tbsp baking powder

  • 115g caster sugar

  • 100g white chocolate chips

  • 50g white mini marshmallows, cut in half

  • 2 eggs

  • 250ml milk

Preheat the oven to 200 degrees/gas mark 6. Grease a 12 hole muffin tin or line with muffin cases.

Sift the flour, cocoa powder and salt together into a large bowl. Mix in the chocolate chips, sugar and marshmallows.


Place the eggs in a large jug or bowl and beat lighly, then beat in the milk and oil. Make a well in the dry ingredients and pour in the beaten liquid ingredients. Stir gently just to combine, do not over mix! Spoon the mixture into the muffin tin.


Bake in a preheated oven for 20 minutes until cooked and firm to touch. Allow to cool for 5 minutes and then place then on a wire tray to cool further.
